The pias are roasted with mesquite for about seven days in small underground stone pits at Hacienda Patrn in Jalisco, Mexico. Theyre then crushed with a tahona wheel (a huge, heavy wheel made traditionally out of volcanic stone), fermented and distilled. The underground roasting of the agave results in a smooth and sweet spirit with notes of cooked agave, citrus, honey and pepper.
